How Fresh Bread Is Made Every Morning
I work at a small bakery on Bridge Street. Every day before sunrise, fresh bread is made for customers who arrive at seven. The process is simple, but each step is done with care.
First, flour is mixed with water and yeast in a large bowl. Salt is added slowly, and the dough is kneaded until it feels smooth. When the mixture is ready, it is left to rise in a warm corner of the kitchen.
While the dough rises, the ovens are heated to the correct temperature. Trays are cleaned and lined with paper. Small rolls are shaped by hand, and long loaves are placed on separate trays.
After an hour, the dough is checked again. If it has doubled in size, it is divided into portions. Each portion is weighed so every loaf is sold at a fair price.
