Reporter: Good morning, Mr Santos. Thank you for meeting us at your shop on Baker Lane at six o'clock. Why do you start work so early?

Mr Santos: Customers expect fresh bread before eight, and ovens need time to heat properly. I like mornings because the street is quiet, but afternoons feel busy when schools finish and families buy rolls for dinner.

Reporter: Do you enjoy baking every day?

Mr Santos: I love making dough, and my assistant Ana loves decorating cakes for birthdays on weekends. She does not like waking at five, but she likes seeing smiles when children open boxes at parties in the afternoon.

Reporter: Who taught you this trade?

Mr Santos: My uncle taught me in his kitchen when I was sixteen, and he showed me how to fold pastry because patience creates better layers.
