What Happens in the Kitchen When You Cook
I am Nina. I teach basic cooking to teenagers at a community centre. When I explain how ingredients behave, I use simple rules that always work the same way.
If you heat butter in a pan, it melts quickly. If the temperature rises above one hundred degrees Celsius, water boils and steam appears. If you leave milk outside the fridge for several hours, it goes bad and smells sour.
If you mix flour with water and salt, you create a basic dough. If you knead the dough for ten minutes, it becomes smooth and elastic. If you do not knead enough, the bread does not rise well in the oven.
If you chop onions, your eyes often water. If you rinse onions under cold water first, the effect is less strong. If you cook onions slowly in oil, they turn golden and sweet.
