Callum knelt in the damp moss and pressed his thumbnail into the spongy cap of a mushroom , checking whether the bitter evening air had already crystallized its fibers . The thermometer in his breast pocket read three degrees , and the weather station in the glen predicted a killing frost by midnight . Beside him , Chef Mara knelt with a wicker basket in one hand and an iron knife in the other , racing against a winter sunset that had begun to stain the pine tops amber . " If the temperature drops below zero , the flesh will turn to jelly , " Mara said , scraping soil from a pale stalk . " We need twelve pounds for the winter menu , and so far we haven't gathered half that . " " We will , " Callum replied quietly , scanning the slope above them . " You look for golden chanterelles along the birch line ; I , for hedgehog mushrooms under the hemlocks . " Mara hurried toward the birches while Callum climbed the steeper ridge . She had expected to spot clusters beneath the open ferns , but found nothing ; Callum , by contrast , uncovered three prime colonies buried under decaying needle litter within ten minutes . Whenever she hesitated over an unfamiliar specimen , he called down instructions without looking up from his work . " Can we harvest the smaller ones ? " she shouted against the rising wind . " You shouldn't , " Callum called back . " Leave those for next autumn . The spores need time to disperse , and besides , the tiny buttons have almost no aroma . " Mara nodded and stepped over a fallen trunk , careful not to crush the delicate mycorrhizal network beneath her boots . She wanted to explore a secluded ravine near the brook , and asked Callum if she might do so before the light failed completely . " I wouldn't advise it , " he said , catching up to her with his cedar basket half full . " The moss down there is treacherous when wet , and if anyone gets stranded with a sprained ankle , neither of us will reach the truck before dark . " " Neither will the mushrooms survive the night , " she pointed out with a stubborn grin . " True enough , " Callum conceded , " but broken bones are harder to mend than an empty pantry . " He parted a thick curtain of juniper branches and gestured toward a sheltered hollow . There , sheltered from the frost by an overhanging granite ledge , grew a massive flush of grey chanterelles , dense and untouched by rot . Mara knelt beside the colony with reverent haste . She sliced the stems cleanly at the base , and Callum gently layered them between sheets of brown parchment . By the time the last purple light faded behind the ridges , both containers were filled to the brim . A biting wind whistled through the high boughs , but the harvest was secure .
