Imaginemos una comida de Lara. En la imagen, el grupo de frutas y hortalizas ocupa la mitad del plato. Ella combina tomate, zanahoria y espinacas, y deja una pieza de fruta para después. Esta escena es ficticia, pero las proporciones proceden del modelo de AESAN.
En otro cuarto, Lara escoge arroz integral en lugar de arroz blanco. En el último coloca lentejas. Las legumbres forman parte de los alimentos de origen vegetal que AESAN recomienda aumentar, y también pueden aportar proteínas saludables.
La guía española prefiere los cereales integrales, menciona grasas saludables como el aceite de oliva y aconseja beber agua del grifo siempre que sea posible. También une la alimentación con la actividad física. La imagen, por tanto, no se limita a contar alimentos.
Conviene recordar que una misma distribución visual no produce un menú idéntico para todos. La OMS explica que la composición exacta depende de la edad, el sexo, el modo de vida, la actividad física, la cultura y los alimentos disponibles en cada lugar. Sus cuatro principios generales son adecuación, equilibrio, moderación y diversidad.
La OMS también aconseja limitar la sal y los azúcares libres. Para las personas mayores de diez años, propone al menos 400 gramos diarios de frutas y verduras. Esa cifra se refiere al conjunto del día, no a una sola comida.
Aunque el dibujo es sencillo, permite hacer preguntas útiles: ¿hay variedad?, ¿aparecen alimentos vegetales?, ¿qué bebida acompaña la comida? La idea es observar el conjunto sin que un grupo sustituya por completo a los demás.
