En la mesa pongo un kilo de tomates maduros, dos pimientos verdes pequeños, dos dientes de ajo y cien gramos de pan. También preparo cuatro cucharadas de aceite de oliva virgen extra, una cucharada de vinagre de Jerez, agua y sal.
Antes de cortarlos, lavo los tomates y los pimientos bajo el grifo. La Agencia Española de Seguridad Alimentaria y Nutrición recomienda lavar así las frutas y verduras antes de consumirlas o prepararlas.
Primero pongo el pan en remojo. Después corto las verduras y las mezclo con el pan, el aceite, el vinagre y la sal. Uso una batidora para triturarlo todo.
Añado más o menos agua según la textura que quiero. Con más agua, el gazpacho queda menos espeso. Pruebo una cucharada y ajusto la sal y el vinagre.
Sirvo el gazpacho en cuatro cuencos. Como guarnición, cada persona puede añadir tomate, pepino, pimiento verde, cebolla, pan o huevo duro, todo muy picado.
En mi cuaderno escribo los ingredientes y los pasos. También anoto una idea para la próxima vez: preparar la guarnición antes de usar la batidora.
