About this article
What you'll learn
Present tense in a kitchen: the cold station, the hot station, and verbs for frying, turning and sending a plate.
Lucía is a cook in a restaurant in Cádiz. A table wants fried fish now, and she wants that fish still hot when it reaches the customer. She keeps the fish in the fridge, in the cold station, until a waiter brings the written order. An assistant cuts lemon on a steel table with a different knife. On the gas burner she fries the fish in hot oil, and the extractor hood takes the smoke. She adds a little salt at the end, turns the fish with a spatula when one side is golden, and takes it out when the other side is golden too. She does not promise a minute. She drains the oil, adds lemon, and at the kitchen door the rim of the plate is still hot.
