Mara stood at the corner and watched two doors . On the left , a bright restaurant showed photos of the same burgers she could order at home . On the right , a narrow room was already full , and nobody inside was looking at a phone for a translation . She had come to this city because she wanted to eat the way people here ate . The bright door was easy . She chose the narrow one . Inside , the air was warm with oil , herbs , and something sharp she could not name . A woman behind the counter looked up . A board on the wall was written by hand , and Mara could not read a single line . Her face went hot . Then the woman tapped one line with a spoon and said the name of the dish slowly , once , and then again . Mara repeated the name as well as she could . The woman nodded , as if that was enough , and pointed to a small table by the window . Mara sat down with no menu and no photo of the food . The plate came with rice , a piece of grilled fish , and a green sauce . Mara tasted the sauce on its own . It was fresh , then sour , then hot enough to make her blink . She looked up . The woman raised her eyebrows , and Mara nodded before she took a real bite , fish and sauce together . The heat stayed , but the sour part lifted the fish , and she saw why the woman had pointed to that line and not another . When the plate was half empty , Mara caught the woman's eye and pointed at the sauce . She did not have the words for a long question . She held up three fingers , hoping to learn the main parts . The woman laughed , not unkindly , and set a green herb , a lime , and a small red chili on the counter . She named each one . Mara said the names back . On the third try the woman looked satisfied and slid a paper napkin across so Mara could write the words down . She ate until the rice was gone . At the door she read the three words on the napkin again and put it in her pocket . She still could not read the board on the wall . She could say one dish , and she knew what made it taste like this room . That was the meal she had come for .
