Paul starts his day early. His alarm goes off at five. His kitchen is warm and smells of flour. There are large metal bowls on his shelves and a big oven at the back. Its door is heavy but its heat is even and reliable. Paul says its temperature is the most important thing for good bread.
On Monday Paul taught me to mix dough. My hands pushed and folded the warm dough. His instructions were patient and clear. He said my technique was not bad for a first try. I was glad but my arms felt tired after an hour.
His assistant is a young woman named Sara. Her station is near the window. Her job is to shape the smaller rolls. Her hands work fast and each roll is the same round shape. She showed me her method. Its secret is the pressure from the heel of my palm.
There are many types of bread in the display case. A round dark loaf sits in its own basket. Its crust is thick and its smell is strong. There is also white bread, seed bread, and a flat bread with herbs on its top. My favorite is the one with seeds. Its texture is chewy and good.
Customers come all morning. Their bags are often already full from other shops. A woman with her two children came in on Tuesday. Her older child pointed at a roll with chocolate in its center. The younger one wanted its twin on the shelf. Paul gave them both a free sample with a smile.
My mom sometimes buys our weekly bread from Paul. Her choice is always the seed loaf. She says its crust is perfect for soup. My dad prefers the white bread for his morning toast. Our family finishes a whole loaf in two days.
On my last day Paul gave me a small loaf to take home. Its shape was not quite perfect but its taste was good. My mom cut it at dinner. Her eyes went wide when she tasted it. She asked me for Paul's recipe. His answer was that his dough needs love and time.
I learned a lot that week. I can mix simple dough now and I can shape a roll. My hands are stronger. I want to go back next month if Paul will let me. There is always a lot to learn in his warm, bright kitchen.
