Lila wanted one yes before lunch . She wanted the manager to let her buy fish from the boats under the hotel , already drawn up on the sand , instead of the boxes on the truck from the capital . Guests asked every evening where the fish was from . The menu said catch of the day . The fish she was told to cook sat in a freezer . The truck was early . The driver knew her name and carried the same list as last week and the week before : fish , rice , oil , and the small sealed puddings the buffet set out in a row . She did not sign . She opened one box . The fish was cold , gray at the edges , and labeled from a port she had never seen . It would feed the room . Payment for it would go to a supplier the town did not own , and the boats under the terrace would leave with what they had caught . She went down to the sand while the driver waited . Joseph stood by a row of baskets , watching a sun that was already too high . He named a price . She had her own money in her pocket , not the kitchen's , and she would not promise what the manager had not allowed . If she took a string of fish for one table , she asked , could he sell the rest in town ? He said the town was small . For him , the hotel was the buyer that mattered . The whole question stood between a truck and a boat . The manager met her on the step . He was not unkind . Head office had already paid for the boxes , he said , and a menu printed far from this bay would not be rewritten before lunch . Fish from the boats was a line they might add next season , when someone had time to put it in the plan . He talked about guests , quality , and a supplier who never failed a delivery . He did not talk about Joseph , who was still on the sand with the morning's catch and the heat climbing . Lila bought the string with her own money and set Joseph's fish on the one table she served by the window . The buffet ran on the boxes . A guest asked whether the fish was from here . She told him to stand . The boats were still below the terrace , and these plates had come from them that morning . She did not add that the buffet had come off the truck . She had wanted the kitchen . What she had was a plate .
