Gianna Rossi tapped the digital display of the benchtop titrator , waiting for the blue backlight to steady in the damp chill of the pressing shed . On the stainless - steel counter sat three amber vials containing the dawn pressing from the estate's south - facing grove . The readout settled at zero point eight five percent free acidity , a figure that breached the legal ceiling for extra virgin classification . Her uncle , wiping grease from his apron beside the hydraulic press , blamed the new continuous decanter for this sudden failure . He insisted that the high - speed centrifuge was overheating the olive paste during separation , yet Gianna doubted that explanation ; the thermal sensors had registered a consistent twenty - five degrees throughout the morning run . That mechanical suspicion overlooked the biological condition of the fruit itself . Extra virgin olive oil requires not merely careful pressing , but pristine fruit whose cellular walls remain intact until crushing . When fruit skins tear prior to milling , endogenous enzymes immediately begin hydrolyzing triglycerides into free fatty acids . This degradation process accelerates whenever damaged olives sit in humid crates , releasing volatile compounds that ruin the aromatic profile long before the liquid reaches the bottle . Gianna picked up a handful of dark Moraiolo drupes from the hopper . Under the inspection lamp , these dark spheres revealed tiny purple fissures around their stems , subtle tears characteristic of wind - driven hail . Those minute abrasions explained the chemistry that the decanter could never have caused . A severe squall had swept across the lower terraces forty - eight hours earlier , while the higher hillside groves had escaped the storm intact . The bruised fruit from that low slope had begun fermenting in the harvesting bins overnight , and that brief delay had driven the acidity past the acceptable margin . The equipment had merely extracted what those compromised cell membranes had already surrendered . Gianna showed these bruised skins to her uncle , pointing out the dark halo around each impact mark . Seeing that evidence , he halted the conveyor belt feeding the mill . Together , they diverted the remaining crates from the valley floor to the secondary press reserved for standard culinary oil , while sending workers up to harvest the unblemished fruit on the upper ridges . The next extraction ran forty minutes later , clear and emerald green , with the meter settling comfortably at zero point two four percent . The morning's prize was preserved .
